I have some coding skills and I made a Minecraft server but that's about the brink of my knowledge. I was looking at THIS server here, but I don't even know what to do with all the files.

Which posted server do you guys think has been the longest supported/easiest to set up? (Like something double-click a server jar to boot that up, a second one to boot up the client and maybe something simple to port forward to connect)

If you actually take a look to a few threads about setting a server up in Eclipse, you'll find out that it only take 30 seconds to setup and after that you can run both of them in two clicks.

Not necessarily, but it's higly recommended to use an IDE, like Eclipse. Will simplify your life a lot. Here's a tutorial on the basic of Eclipse while setting up a server.
It looks harder than what it is to be honest, just mess around with it and you'll easily take your hand on it quickly.
