you cant unless opened with notepad++ but its not plain text, its encrypted. You can change it to json saving but then you'd have to fix all of matrix shit to do so properly

hey im new to the private server scence could anyone tell me how to open a .p character file, or made the server save them as plain text

You can either write a tool to manually change specified fields (check your tools folder there should already be examples of this in matrix)
Or you'd have to change the way players are loaded which isn't too hard, but you would need some understanding of how that works.
I wrote a basic way you could save a whole player file in one step with json a while ago here: [Only registered and activated users can see links. ]
