Realistically, maybe 2 at most 1 being a web server and another for a game server; or 1 powerful dedi with multiple vps's for those purposes. As for the independent link of 10gbps, if its the same datacenter housing the servers the incoming connection is shared. If you want redundancy, get multiple vps's in different datacenters to provide an uplink at all times as OVH has proven, an animal can cause an outage for awhile.

A backup dedicated server with the same specs costs us a menial amount, and is necessary in situations like today, where the primary game dedicated server will have to be pulled down for several hours to check malfunctioning memory. In fact, this situation is the entire reason we opted for the secondary game server - to avoid any downtime while the primary dedicated server was down, in future events as well. The third is simply for the webserver; VMs are spun up on each of these. The servers are also on different networks and communicate very quickly due to the rackspace. While not entirely necessary, it's negligible as I pay a very small sum for all three of these servers, and could easily operate out-of-pocket, if I had to.

I haven't played, but I've been following this post for a while now. After all the shit people have given you, I can give you my most sincere congratulations. What you guys are doing is actually pretty impressive (to me, at least). One of these days I'll actually hop on, but until then, keep up the good work.
