XP is faster in that it's more lightweight, due to it's lack of graphical build-up and is still a favourite among schools and offices.

Windows 8 recently had an issue discovered in-which a hacker could remotely gain total access to the end-user's computer, so I'd steer away from it for the next 6 months to a year, to make sure most of the crucial exploits are weeded out.

Windows Vista is garbage, don't even bother with it - In-fact; If you have it, delete it.

Windows 7 is decent, more stable than Vista, better tested than 8, nicer looking than XP while sacrificing performance - Of-course, it does have the compatibility with 64x applications to sweeten the deal.

Hope that helps to answer some of your questions.

I'd keep Windows XP on a disk if you were going to dual-boot, as it provides a nice little rescue-environment if something goes awry.

You could also get MiniXP as part of a Hirin's Boot CD bundle, free of-course.
It's extremely useful for that sort of thing, my custom Distribution even has Java7 Portable on it and a couple different programming tools.

I would advise you to not use Win8 as your primary OS and instead use Win7 if you don't want to go with WinXP.

Generally, new operating systems have a huge lack of actual exploit testing done.
This same principle also holds true for programs, as evidenced a few years ago when an exploit allowing Java to run promiscuous code outside of the Sandbox without needing any permissions was discovered.

Also, a large amount of programs aren't likely to have any support for Windows 8, at-least, not for a bit.
