What's better for gaming, like what gives most field of view in width and things, or are they the same?
A picture would really help

depends on what gaming you're doing. if you're playing on your PS3 most games run in 720p, so playing those games fullscreen on a 1080p is just going to give you an upscale quality. not that you'll notice much difference.
call of duty runs in like 640p on consoles. scaled up (or down if you're poor) to whatever resolution you have. all games are similar like that. everything is just scaled up. games are all shipped with low resolution textures for console.
pc games own all in quality. higher resolutions are always better (as long as they are progressive). interlaced sucks. 1080p only, no 1080i shit. remember that.
Progressive is always better than interlacing. I'd rather play in 720p than 1080i. Interlacing is an illusion of a full picture. Basically it is only showing half of the frames at any one time. The first frame only has data every other line, the second frame contains all the other data. It goes so fast that you don't typically notice it. Progressive is a full picture.
It really depends on what kind of TV/monitor you're using (and it's resolution) but for something like a 1080p monitor, 720p and 1080p are better than 1080i (the amount of data in 720p makes it so that you can scale up to 1080 without much noticeable difference.) Any TV/monitor with a resolution of anything below 720p doesn't really matter. Just stick with progressive. Interlacing is a dead technology only around for old CRT TVs lol.
Remember this kind of footage from like a few years ago?
That's interlaced. Just imagine a car going across the screen.
You can also see an example of interlaced video in Cell's signature.
